New York steakhouse T-bone with CheatMeats.

Ingredients

Steak

  • T-bone steak
  • salt
  • 1 brown onion

Compound butter

  • 3 garlic cloves, finely diced
  • 1/2 shallot, finely diced
  • 1 red chilli, finely diced
  • Fresh Italian parsley
  • 100g unsalted butter
  • 1 lemon
  • olive oil

Method

  1. Remove the T-bone steak from the fridge and allow it to temper on the bench for 20-30 minutes.
  2. Season the T-bone steak with plenty of salt on all sides, including the fat cap.
  3. Slice the brown onion into thirds and place straight onto a skillet set over medium heat.
  4. Place the steak on the same skillet and grill for 4 minutes on each side.
  5. While the steak is grilling, make the compound butter. In an small mixing bowl combine the garlic, shallot, red chilli, chopped fresh Italian parsley, 100g unsalted softened butter and the zest of a lemon.
  6. Tightly roll up the compound butter with baking paper and set in the fridge.
  7. Char the fat cap then remove along with the grilled onion
  8. Preheat a cast iron pan over high heat with some olive oil.
  9. Place the sliced steak back on the hot pan as well as the grilled onion.
  10. Add slices of the set compound butter on top of the steak and grill the steak until the butter has melted.
  11. Remove the steak and season with salt, then serve it straight away in the sizzling hot pan.
