Melissa Palinkas has been whipping up delicious dishes for years with a zero-waste food philosophy. We have caught up with Melissa a few times to learn more about her passion for cooking and for a few recipes she loves to cook, using almost all of the ingredients, root to shoot!

One of Melissa’s favourite ingredients is the Shiitake mushroom. She uses every part of these locally sourced fungi in her delicious dish of buttermilk Wagin chicken with potato cream, shiitake mushrooms and chicken gravy!

You can use mushroom stalks and dehydrate them to create a mushroom seasoning.
While most chefs at home and in the kitchen will put the seconds in the bin, Melissa finds unique ways to use the seconds, creating a zero-waste space!
